Tonkatsu @ Honolulu

Opened August 10, 2025 on Waimanu Street near Ala Moana Center, this tonkatsu specialty eatery was founded by Nagoya natives, Go Oyamada with Michelin-trained Chef Keita Maeda helming the kitchen.  The lineup features aged U.S. corn-fed pork (loin and tenderloin), Miyazaki A5 wagyu gyu-katsu (beef katsu), chicken, shrimp and oysters battered with fragrant breadcrumbs made from fresh bread baked by local bakery EPI-YA, and deep-fried in a special blend of soybean oil and pork lard, eliciting beautifully crisp textures.

Choose from house sauces (including mild, spicy, and miso tonkatsu sauces) to accent each fritter.  The dishes are complemented by shaved cabbage and premium white Niji no Kirameki rice hailing from Ibaraki, Japan.  Lunch starts from just $18, and dinner from $28.  Breakfast is also in the works so keep an eye out for the onigiri rice balls, which make for great take away snacks for later.  An intimate 32-seat space makes for a relaxed katsu experience.
